Passover Apple Cake Recipe
* 1 Cup sugar
* 1 Cup matza meal
* ½ Cup oil
* 4 Jumbo eggs separated
* Juice of 1 lemon
* 5 McIntosh apples pealed and sliced
Nut Mixture: ½ Cup sugar mixed with 1 tsp. cinnamon and ½ cup chopped walnuts
In a bowl combine sugar, matza meal and oil add egg yolks and lemon juice mix well. (Set aside.)
In another bowl beat egg whites stiff and fold into matza meal mixture.
Grease and 8x8 inch pan and add half of the mixture.
Peal and slice the apples and place on top of the mixture in the pan.
Sprinkle with half the nut mixture.
Place the reaming half of the batter on top of the apples and sprinkle with the remaining nut mixture.
Bake at 325 degrees for 40-50 minutes.

Chicken Soup Recipe
* 8 lbs. Cut up chicken pieces with bones.
* 1 Large white onion whole
* 4 Stalks of celery sliced in large pieces
* 1 Bunch of parsley
* 1 Bunch of dill
* 8 Peppercorns
* 1 lb. Bag small peeled whole carrots
* Salt & Pepper
Place chicken in an 8 quart stock pot. Fill to top with cold water.
Bring to boil then reduce heat and remove white foam.
Add whole onion, celery, parsley, dill, peppercorns and carrots.
Cover and cook on low heat 1 ½ to 2 hours until carrots are very soft and chicken is falling off the bones.
Remove and discard whole onion, celery, parsley, dill and peppercorns.
Remove Chicken from bones and skin and place in separate bowl.
Remove carrots from broth and place in chicken bowl.
Strain soup broth to remove any small pieces of bones parsley celery etc put broth back into stock pot.
Then season broth with salt & pepper to taste and return chicken and carrots to broth in the stock pot. Re-heat to serve (Serves 8-10).
